The following food service establishments were inspected in Tift County between August 7, 2009 and August 13, 2009. These establishments were evaluated according to the rules and regulations set forth in the Georgia State Chapter 290-5-14. The violations for each establishment are divided into two categories, Public Health Interventions to control Food borne Illness Risk Factors and Good Retail Practices. Risk Factors are food preparation practices and employee behaviors most commonly reported to the Centers for Disease Control and prevention as contributing factors in food borne illness outbreaks. The establishment shall at the time of inspection correct a Risk Factor violation unless determined otherwise by the Health Authority considering the nature of the hazard. Good Retail Practices are preventive measures to control the introduction of pathogens, chemicals and physical objects into foods. Good Retail Practices violations shall be corrected within 72 hours after the inspection is completed unless otherwise directed by the Health Authority. Each establishment will have a current score and current grade.

Foodborne Illness Risk Factors and Public Health Interventions in violation: Employee health policy shall include all reportable illnesses and symptoms. Paper towels shall be provided at all hand wash sinks. All hand wash sinks shall be cleaned. (6 points)

Tea nozzles, ice bin, ice machine, microwave and vegetable slicer shall be cleaned and sanitized as often as necessary to prevent mold and buildup. All kitchenware shall be thoroughly washed, rinsed and sanitized. Pizza oven shall be cleaned and sanitized according to manufacturer’s recommendations. (6 points)

Cold, potentially hazardous foods shall be maintained at 41°F or below. (11 points)

Good Retail Practices in violation: Food service permit and inspection report shall be posted. (1 point)

In-use utensils shall be stored in a clean location. Scoop with a handle shall be used to dispense food. Single-use articles shall be stored inverted. Utensils shall be stored with the handle up to avoid touching the food contact surfaces. (2 points)

Refrigerator for storing pizza shall be repaired. Inside of dish machine shall be cleaned. All non-food contact surfaces shall be cleaned including but not limited to countertops, storage shelves, carts, shelves in pizza refrigerator, outside of bulk containers and door, vent covers, shelves and walls of walk-in cooler. (2 points)

Paper towel dispenser shall be provided in men’s restroom. Dumpster area shall be cleaned. Floors and walls shall be cleaned. Cove base in walk-in cooler shall be repaired. Ventilations shall be cleaned including over pizza oven. (2 points)
